A SCOBY is a key component in brewing kombucha. The term stands for "Symbiotic Culture of Bacteria and Yeast". It’s a living culture that looks like a thick, rubbery, jelly-like disc, often beige or light brown in colour.
What does a SCOBY do?
During fermentation, the SCOBY transforms sweet tea into kombucha by:
- Feeding on sugar and tea – The yeast breaks down the sugar into alcohol and carbon dioxide, while the bacteria convert the alcohol into beneficial organic acids.
- Producing probiotics – The fermentation process creates live cultures (probiotics) that support gut health.
- Protecting the brew – The SCOBY acts as a natural barrier, keeping contaminants out during fermentation.
What is it made of?
The SCOBY itself is made of cellulose produced by the bacteria, which provides a structure for the yeast and bacteria to thrive.
Is a SCOBY edible?
Yes, it’s technically edible, though it’s not to everyone’s taste due to its texture. Some people blend it into smoothies, dehydrate it as a snack, or use it in creative recipes.

We use real fruits and the highest quality ingredients, sourced from small farmers who care deeply about their produce. The difference is a light spritz, softer finish, and more flavour.

Kombucha is a naturally fermented drink and contains small trace amounts of alcohol, typically less than 0.5% ABV. This makes it a non-alcoholic beverage by legal standards, perfect for all ages to enjoy.

No. We adopt a natural method of fermentation, similar to the natural wine making method, referred to as "pet-nat" or Naturally Sparkling. We ensure the spritz is natural and gentle, and not a harsh fizz that you would expect from a commercial supermarket brand.
Nature is gentle, so we let her speak direct through her process.

This is a matter of personal interpretation and individual faith. While the alcohol in kombucha is naturally occurring and minimal, Islamic dietary laws generally prohibit consuming alcohol in any form. Some Muslims may choose to avoid kombucha entirely, while others may accept it because:
- The alcohol is not intentionally added – it occurs naturally through fermentation.
- The amount is negligible – less than 0.5% ABV is similar to levels found in some fruit juices, vinegar, or bread due to natural fermentation.
For peace of mind, it’s best for Muslims to consult with their religious authority or scholars for guidance on consuming kombucha.

Sugar is essential to the fermentation process, as it feeds the SCOBY. By the time fermentation is complete, most of the sugar is consumed. Our kombucha contains minimal residual sugar, just enough to maintain its balanced, delicious taste. Check out our individual labelling, where residual fermented sugars sit between 3.2-4.4% which translates to approximately 8-11 grams per 250ml serve across the core range.

Kombucha should always be stored in the fridge to preserve its natural live cultures and freshness. If kept refrigerated, it can last for months, though we recommend enjoying it within 1–2 weeks of opening for the best taste.

While kombucha is safe for most people, those sensitive to caffeine, trace alcohol, or probiotics may want to check with their health professional first. Pregnant or breastfeeding individuals should also consult their doctor before drinking kombucha.

You are more than welcome to collect a scoby from us. We don't sell these, as it's an organic belief that we should make this available, just as we had our first one available to us in 1995.
The best way is always to organise one for collection from one of our Farmer's Market events (3-4 weekly).

How does brew to you work

You simply need to start with just picking your favourite range and add the items to your cart and check out using the 'subscribe & save' option
Deliveries are on Tuesdays and Fridays. Kombucha is better cold, so leave us out an esky if you're not home, and pop it in the fridge within 6 hours. Log in to make changes or vary your orders, just ensure these are made no later than 24 hours before your delivery day.
Orders will then be repeated every Tuesday or Friday, you can email our team@hippie.au to change your delivery day to Tues or Fri no problems.You have the freedom to pause, change, or cancel your subscription at any time.
Regional orders (coming soon) may have a different delivery day, but will be communicated at checkout. -

Yes, you can modify your Brew to You subscription at any time. This includes pausing, changing the product selection, or cancelling your subscription entirely. We will be sad to see you go, but will always be here with open arms if you decide to come back later.

Bottle returns & Reuse

For subscription Brew to You customers, you can simply leave your box out on delivery day, and we'll grab it on our way through. Lids are not essential, but we have a solution if you can return them.

Reuse is such a big part of our eco system, and we encourage & love our customers who turn up each week to our events and return our bottles. You can be assured that they go back into our reuse stream, where the team carefully take them through a 5 stage process to return them to brand new.
‼️ Did you know, we can reuse our labelled bottles up to 7 times and beyond that infinitely longer with relabelling. Yes, we do all this weekly!
Returns & Refunds

Generally once the product has been delivered and opened, we cannot return the product unless through fault. If you feel your product is less than retail ready, please reach out to the team, team@hippie.au to see how we can assist you.
